The little and big people will LOVE this!
1 loaf of French Bread...day old is fine
olive oil
2 slices of pancetta or bacon
2 pounds ground beef (you know I just bought the regular size pkg.)
2 cloves of garlic, chopped
2 yellow onions, finely chopped
1 small carrot, peeled and chopped finely
salt and pepper
1 tablespoon Worcestershire sauce
1 teaspoon allspice
1/2 cup red wine (bonus...you get a glass, too!)
1/2 cup beef stock
1 (14 ounce) can crushed tomatoes
1 pound fresh mozzarella, thinly sliced (or just use shredded!)
3/4 cup grated parmesan
1 cup fresh basil, shredded or torn (you can skip this)
Heat oven to 450 degrees
Split the French bread in half and hollow out some of the insides of the bread to make a place to spoon the filling...place in the oven for 5-8 minutes to crisp up the inside a little
Heat a large skillet and add some olive oil. Add pancetta or bacon and let cook for a minute or two...add the ground beef breaking it up into big pieces in the pan and let it sit for a minute and let it caramelize, then break it up and cook until browned...add garlic, onions, carrots, salt and pepper, Worcestershire and allspice. Cook for 10 minutes stirring frequently. Add wine and scrap up bits on the bottom, then add the stock and tomatoes...cook for a minute or two until heated through. Fill both sides of the bread with the meat mixture then a layer of mozzarella and then the parmesan...place in the oven and cook for 5 to 7 minutes or until the cheese is melty (is that a word?)! Top with the basil and serve!
