If you have ever been to my Halloween Party...this is what is on the menu EVERY year! It is super easy, and so good--easily doubled or tripled, as well. You can add more spice, but the recipe as written will be great for kiddos of all ages. Fowler was eating this at 18 months! The recipe is also a "light" recipe...not many chili recipes can say that!
Saute 2 medium chopped onions in 2 to 3 tablespoons
of olive oil...add the following--

1/4 cup chili powder
1 1/2 teaspoons oregano
1 1/2 teaspoons cumin
2 garlic cloves, chopped
3/4 teaspoon of salt...cook for
30 seconds.

Add 3 cups chicken stock
1 (16 ounce) can of drained kidney beans
1 (15 ounce) can of drained and rinsed black beans
1 (14.5 ounce) can of diced tomatoes
Bring to a boil, reduce heat, and let
simmmer for 30 minutes...add 3 cups of diced, cooked
chicken breast and simmer for 15 more minutes.
