Prosciutto Wrapped Fish with Roasted Tomatoes and Chive Gnocchi


Prosciutto Wrapped Fish with Roasted Tomatoes and
Chive
Gnocchi

If your kiddos do not like fish...try wrapping it in a little
prosciutto. When Fowler and Caraleigh were little they loved fried catfish, so when I started serving them other kinds of fish...I just told them it was catfish, no matter what kind of fish it was! Roger would come home and ask what kind of catfish we were having for dinner! I have since fessed up, and hey both LOVE all kinds of fish! If you cannot handle the thought of fish...this would be just as good with a chicken breast...just alter the cooking time!


1 pint of grape tomatoes
3-4 garlic cloves, chopped
1 shallot, finely chopped
olive oil
salt and pepper
10 to 16 ounces of gnocchi...mine was in the pasta
aisle (they also sell it in bulk at Sam's)
4 cod, halibut, or tilapia fillets
8 pieces of
prosciutto
2
tablespoons of butter
chives

Sprinkle fish with salt and pepper...wrap with two
pieces of
prosciutto...place on cookie sheet and bake
at 425 for
20 minutes or more depending on how thick
your fish is.
Place tomatoes, chopped garlic, and
chopped shallot on a cookie sheet lined with
foil...sprinkle with salt and pepper and toss with
some o
live oil. Bake at 425 for 20 minutes. Boil the gnocchi according to package
directions. Place butter in a
sauce pan and toss with
the cooked gnocchi and chopped chives...let brown in
butter for 5 minutes or so. Serve the fish with the
tomatoes on top and the gnocchi on the side!
