Peas, Ham, and Cheese Tortellini

Peas, Ham, and Cheese Tortellini

So white sauces are not my fav, but Caraleigh LOVES 'em and this is one of her favorites...especially cold in her lunch box the next day!


1 pound cheese tortellini
1 1/2 cups frozen peas, thawed
2 T. butter
5 scallions, thinly sliced
2 T. flour
1 2/3 cup milk (I use skim!)
salt and pepper
1/3+ cup grated Parmesan cheese
1 1/2 cup diced ham...sometimes I just have the deli cut me a hunk and I cut it up.

Cook tortellini and drain.
Add peas, butter, and scallions to a large skillet, and cook over medium heat for 2 minutes..whisk in the flour
and cook for about a minute. Slowly add the milk and whisk until it thickens. Add ham, salt, and pepper.
Toss in the tortellini and parm...toss together.
