These were extra yummy...I think that Fowler would have powered down 4 pieces of chicken if I would have had them! Had spoon bread with it, and it was great with the sauce...also I used Fat-Free Catalina...it is just what I had!
2 Tablespoons of olive oil
4 chicken breast
1/2 cup of Catalina dressing
1/2 cup of apricot jam/jelly/preserves
1/2 package of dry onion soup mix
In a small bowl mix the dressing, jelly, and soup mix. Heat 2 tablespoons of oil in a saute pan that is oven proof. Brown the chicken on one side...flip the chicken breast and let brown for three minutes and remove the pan from the heat. Let it sit off the heat for a few minutes and then top each breast with the sauce, pouring the extra throughout the pan. Place in a 350 degree oven for 35 to 40 minutes...until the chicken is cooked through.
