Chinese Chicken Lettuce Wraps

This is Fowler's fav...it finally convinced him that mushrooms were not evil! Georgia made it the other night and changed
the name to Chinese Tacos...I like it!!!


Chinese Chicken Lettuce Wraps

2 cups of finely chopped mushrooms
1-1 1/2 pounds ground chicken
3 cloves minced garlic
1 inch of ginger root, grated or chopped
1 bell pepper, finely chopped
1 small can water chestnuts, finely chopped
3 scallions, finely chopped
1/2-3/4 cup of hoisin sauce...depending on your taste
head of iceburg lettuce

Add a couple of tablespoons of olive oil to a large pan. add ground chicken, breaking up as it cooks.
Add mushrooms-cook a minute or two. Add salt, pepper, garlic, and ginger. Continue to cook and add bell pepper,
water chestnuts, and the scallions. Add hoisin and toss to coat. Serve mixture with iceburg lettuce "cups"
