Cool Summer-Time Fare at its best!
3 cups of cubed, cooked chicken breast
a chopped red onion
a diced yellow and orange bell pepper
3-4 stalks of chopped celery
4-6 minced garlic cloves
1/2 cup chopped flat parsley
1/2 cup toasted pinenuts
Prepare one box of couscous according to the directions, using the box directions swapping chicken stock for water. Allow to cool slightly, and then add to the following dressing mixture to the chicken mixture.
Dressing...
mix together
3 tablespoons red wine vinegar
1/2 teaspoon cumin
1/2 teaspoon curry powder
1/4 teaspoon salt
freshly ground black pepper
2 Tablespoon honey
Whisk in 1/2 cup grapeseed oil (not sure what this is about, I bought it, but next time I am just using olive oil!)
Toss with the chicken and couscous.
