Stuffed Flank Steak Medallions

Fowler and Caraleigh love Flank Steak, so I am always looking for ways to use it.
This recipe came along because I was trying use up some ingredients in the fridge!

Stuffed Flank Steak
Medallions

1 flank steak, trimmed and flattened to about a 9x10 rectangle
2 garlic cloves, minced
3 tablespoons olive oil
1 teaspoon kosher salt
1 teaspoon pepper
Mix together garlic though pepper. Rub all over the flank steak.


2 cups of fresh baby spinach
4-5 jarred, roasted red peppers, drained, dried, and chopped
6 slices of prosciutto
1 cups shredded fontina
Layer the above ingredients on top of the garlic, leaving a one inch border at one long end. Roll up and tie with kitchen twine.
Stuff the extra filling in as much as possible.

1 cup of flour
1 tablespoon sweet paprika
2 teaspoons of salt
1 teaspoon of pepper

Combine these ingredients in a 9x13 pan and dredge the flank steak in the flour mixture.
In a LARGE oven proof skillet (I used my cast iron skillet!) heat 2-3 tablespoons of olive oil. Sear the flank steak on all sides.
Place the browned flank steak in a 350 degree oven for 50 minutes. Allow it to rest for ten minutes. Remove the string and slice!
