Hoisin Chicken Pasta Salad

Stick around long enough and you will begin to see a trend in my recipes! Hoisin Sauce is one of them! I LOVE IT...if you haven't tried...it is like a Chinese BBQ sauce...super yummy!!! You will find it on the Asian foods aisle. I should label this post CSF (that's Cool Summer-Time Fare!). My brother-in-law came up with that name, and pasta salads for sure fall under that category, but this recipe is good any time of year!


Heat a few tablespoons of olive oil...add 2 cloves of
garlic, minced...let simmer for a minute and add four
chicken breast cubed. Cook for 6 to 8 minutes...add
1/2 cup of chicken broth and let reduce slightly.
Add...2 ribs of celery chopped, one red bell pepper,
diced, 2 green onions, sliced, one English cucumber,
diced, and 3/4 teaspoon of salt and pepper. Toss in
16 ounces of cooked penne and cover with the following
sauce...
Hoisin Sauce...
one jar of hoisin sauce
1 1/2 tablespoons of sugar
2 tablespoons of sherry (could sub more chicken broth)
2 tablespoons of sesame oil
1 1/2 tablespoons of rice wine vinegar...mix together
until the sugar dissolves.

You can also just do this with a rotisserie chicken from the store (one of my favorite short cuts!). Just add cooked pasta, rotisserie chicken, and raw vegetables to a large bowl and toss with the Hoisin Sauce Mixture!
