Cannot begin to tell you how much the thought of a Sloppy Joe...well it doesn't sound so great! Fowler and Roger do love them though! I have tried many a recipe, but this one ROCKS!!!! It is thick, not runny...and the turkey meat in it is perfecto!
one large onion, diced
one package lean ground turkey (about a pound and a half)
salt, pepper, and olive oil
2 cups of ketchup
1/4 cup of yellow mustard
1/4 (or more) teaspoon of cayenne pepper
2 tablespoons of brown sugar
3+ tablespoons of tomato paste (less or more depending on how thick you want it!)
1 tablespoon of red wine vinegar
hoagie rolls, toasted
In a heavy pot add a few turns of olive oil, add the onion and saute for three or four minutes...the longer you saute the less the little people notice them I think! Add the ground turkey and season with salt and pepper. Break up with wooden spoon and brown for 7 to 10 minutes. Add ketchup, mustard, cayenne, brown sugar, and tomato paste. Reduce heat and simmer 10 to 12 minutes...it will be really thick. Finish with a splash or two of red wine vinegar and serve on toasted rolls.
