Cowboy Tacos

The name is a little silly, but these are extra yummy, and SUPER easy!

Cut one pork tenderloin into one inch chunks.
Toss the pork with one package of taco seasoning
...heat a teaspoon of oil in a large
skillet...cook pork until no longer pink (3-5
minutes), add the following
1 cup of salsa
1 can of spicy chili beans...the chili beans are next to all the other beans, and they are YUM!)
1/4 cup apricot jelly

Reduce heat to low and simmer for 10 to 12 minutes
until heated through and the pork is no longer pink.

Serve on
flour tortillas or hard taco shells with
cheese and
green onions
