Red Potato Salad

This is a great summer side dish!

3 pounds of small red potatoes, diced and cooked until fork tender

Dressing ingredients...
1/2 cup chopped fresh chives
2 tablespoons of finely chopped onion
1 teaspoon of sugar
1 teaspoon of salt
1/2 teaspoon of pepper
1/2 cup light sour cream
1/2 cup plain low-fat yogurt
2-3 tablespoons of mayo
2 teaspoons fresh lemon juice
1 tablespoon dijon mustard
Whisk together all dressing ingredients. Toss with the potatoes. Chill for two to three hours to allow the potatoes to cool and the flavors to meld.
