My peeps in EP might disagree that these are really Mexican food, but they will have to agree...they are awesome!!!
Combine the following
3 cups diced, cooked chicken (rotisserie is good here!)
1/2 cup diced onion
1 cup diced green chilies
1 can of fat free cream of celery soup
1 cup of milk
1/2 teaspoon garlic salt
1/4 teaspoon pepper
1/2 teaspoon cumin
Spray 9 x 13 pan with PAM. Layer 4 corn tortillas on the bottom of the pan. They will overlap. Top with 1/3rd of the chicken mixture and 1/2 cup
cheddar cheese. Place another 4 tortillas on top of the cheese. Top with 1/3 chicken mixture and 1/2 cup of
cheddar cheese. Place another 4 tortillas on top.
Top with the remaining 1/3 of the chicken mixture and
1 cup of cheddar cheese
cheddar cheese. Place another 4 tortillas on top of the cheese. Top with 1/3 chicken mixture and 1/2 cup of
cheddar cheese. Place another 4 tortillas on top.
Top with the remaining 1/3 of the chicken mixture and
1 cup of cheddar cheese
Bake covered at 350 degrees for 25 minutes. Uncover and bake for an additional 10 to 15 minutes until cheese is bubbly.
