Sangia Glazed Prawns

Who doesn't love a big frosty glass of sangria??? Coat it on some big shrimp...yummy! I have also used salmon and tilapia. This is also great for appetizer portions.

Glaze:
3/4 cup
red wine
1/4
cup apple juice
1/4
cup orange juice
1/4 cup sherry
2 tablespoons of
brown sugar
2 tablespoons of honey
1 tablespoon of cornstarch
3 tablespoons of
cold water

Combine first six in small saucepan. Reduce the mixture by one third. In a small bowl whisk together cornstarch and water...whisk into the hot mixture and reduce heat and reduce mixture by half and thickened.

In a large saute pan add one tablespoon of butter and one of
olive oil. Add one half of sliced red onion, half a red bell pepper sliced, and one red or green apple sliced. Saute until cooked, but not browned. Add a few tablespoons of glaze and toss. Place the fish that has been salted and peppered on top of onion mixture and top with some glaze...let it cook on top of onions and continue to glaze with sauce until the fish is cooked through. If you use shrimp, just toss with the onions and glaze and cook until pink and curled.
