Chicken Spiedies

These fun hoagies (pronounced speedies) are great in the summer...they don't heat up the kitchen, and since it can get into the 100s in EP...not heating up the kitchen is important!!!

Mix together...
1/2 cup olive oil
3 garlic cloves, minced
2-4 tablespoons chopped fresh basil
1/2 teaspoon oregano
2 teaspoons lemon zest, plus 1 tablespoon lemon juice
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon red pepper flake

Take four chicken breast and prick them with a fork all over. Cut into cubes and toss with all but two tablespoons of the oil mixture.

Mix the following with the reserved oil mixture:
3 tablespoons of mayo
1 tablespoon of red wine vinegar
Set the mixture aside. Allow the chicken cubes to marinate for at least 30 minutes, but no longer than three hours. Thread onto skewers. Grill inside or out. Remove from the skewers and serve on hoagie rolls with a drizzle of the sauce.
